EGG GRAVY

Egg is a versatile ingredient and can be used for various recipes all over the world. Today I am posting a South Indian Egg Gravy / Curry recipe. It is delicious and prepared in very less time. We are not going to use any spice powder here. Instead a raw ground paste is prepared instantly and used in this curry.

SERVING SUGGESTION :

  • Serve with Biryani / Zeera Pulao / Chapati / poori / Naan.

INGREDIENTS :

  • Oil -2 Tbsp
  • Cumin seeds – 1 Tsp
  • Bay leaf – 1
  • Onion(medium) – 1
  • Tomato(large) – 1
  • Ginger garlic paste – 1 Tbsp
  • Egg – 4
  • Salt – as required
  • Water – as required
  • Coriander leaves – for garnishing

For masala paste :

  • Coriander Seeds- 2 Tsp
  • Fennel seeds – 1 Tsp
  • Poppy seeds – 2 Tsp
  • Cinnamon – 1 inch
  • Cloves – 3
  • Cardamom – 3
  • green chili – 2
  • Cashew nut – 3
  • Black pepper – 1 Tsp
  • Water – as required

PREPARATION :

  1. Boil eggs in water for 15-20 min or until it is completely done. Drain, cool and peel the skin. Cut into halves.
  2. Finely chop the onions, tomatoes and coriander leaves.
  3. In a blender/mixie add all ingredients given for masala paste. Grind the ground paste by adding required water.

PROCEDURE :

  1. Place a pan on medium flame. Add oil.
  2. When it is hot add cumin seeds and bay leaf.
  3. Saute once and add onion and salt. Saute until it becomes golden brown.
  4. Add ginger garlic paste. Cook until there is no raw smell.
  5. Add in tomatoes and close the pan with a lid and cook.
  6. Saute often until the tomatoes become soft.
  7. Add the ground paste. Saute until the oil Oozes out.
  8. Add water as required for gravy consistency. Cover and cook for 3-5 min.
  9. Add eggs. Gently mix it and cover with lid.
  10. Let it be in low flame for 3 min.
  11. Switch off the stove and garnish with coriander leaves.

TIPS :

  • You can alter finely chopped onion and tomatoes with onion paste and tomato paste.
  • For smooth paste, soak all ingredients in little water for 10-15 min and use that water far grinding.
