BISI BELA BATH – Sambar Rice

Bisi bela bath is a popular Karnataka dish. Bisi Bela Bhaath(in Kannada) means Hot Lentil Rice. This dish is prepared with many vegetables, rice and toor dal. This is very delicious rice dish. Try this recipe once instead of regular sambar and rice. Sure you will start preparing this often. Ingredients list looks longer. But it is easy to prepare this recipe.

  • Serve with Vazhakkai Deep fry(chips).
  • Serve with papad, chips.

INGREDIENTS :

For Bisi Bela Bath powder :

  • Red chilli – 7
  • Coriander seeds – 1.5 Tbsp
  • Channa dal – 1 Tsp
  • Urad dal – 1 Tsp
  • Cumin seeds – 1 Tsp
  • Fenugreek – 1/4 Tsp
  • Asafoetida/ Hing – 2 large pinches.

For Sambar :

  • Toor dal – 1/2 cup
  • Water – as needed
  • Salt – as needed
  • Turmeric – 1 Tsp
  • Castor oil (opt) – 1 Tsp
  • Garlic (opt) – 3
  • Oil – 2 Tbsp
  • Shallots(small onion) – 6-8
  • Tomato(medium) – 1
  • Mixed veges -2 cups app. (carrot -1, potato -1, chow chow -1, avaraikai – 10, brinjal – 2, drumstick -1, any vegetable as you wish)
  • Sambar powder – 2 Tbsp
  • Tamarind – big gooseberry size

For coconut paste :

  • Grated coconut – 5 Tbsp
  • Cumin seeds – 1 Tsp
  • Water – as needed

For Tempering :

  • Ghee – 1 Tbsp
  • Mustard seeds- 1 Tsp
  • Curry leaves – 1 or 2 string
  • Red chilli (gundu milagai) – 3 or 4

For Rice :

  • Raw rice – 1 cup
  • Water – as needed
  • Ghee – 3/4 Tbsp
  • Sesame oil – 3/4 Tbsp

PREPARATION :

  1. Dry roast all ingredients given for Bisi Bela Bath powder separately.Let it cool down completely. Grind it into a fine powder. Keep it aside.
  2. Soak tamarind in warm water for 20 min. Extract juice and throw the pulp.
  3. Soak toor dal for 20  min.
  4. Soak rice for 20 min.
  5. Cut veges into even size.
  6. Chop onion and tomato.
  7. Grind coconut paste. (coconut,cumin and required water)

PROCEDURE :

Cooking Dal :

  1. Pressure cook toor dal for 2 whistles along with a pinch of turmeric, hing and enough water. Open the cooker when pressure is released.
  2. Filter excess water and save it for later use. Mash the dal using a masher.

Cooking Rice :

  1. Pressure cook rice with 4 cups of water for 2 whistles.
  2. Add a ghee and sesame oil on the top of hot rice and mix well.

Cooking Sambar :

  1. Heat pressure cooker/pan on medium flame. Add oil.
  2. Add onion and saute for some seconds.
  3. Add tomato. Saute until tomatoes become soft.
  4. Add mixed veges. Mix well and saute for 3 min.
  5. Add sambar powder, salt, tamarind juice and enough water for sambar.
  6. Mix well and pressure cook it for 2 or 3 whistles.(This step is optional. You can cook directly in pan until veges are cooked well)
  7. When pressure is released open the cooker and add mashed dal and filtered water.
  8. Mix well and let it come to a boil. Add coconut paste.
  9. Cook for 5 min. Turn off the stove.
  10. Add Bisi Bela Bath powder little by little and mix well without forming any lumps.
  11. Temper with given ingredients and add it to sambar.
  12. Mix sambar and rice.

TIPS :

  • I use to add 2 cloves of garlic and a Tsp of castor oil while cooking dal.
  • Filtering water from cooked dal makes it easy to mash the dal.
  • If you cut veges into small pieces u can directly cook veges instead of pressure cooking it. I prefer pressure cooking.
  • You can start cooking rice while you start preparing sambar.
  • You can cook rice and dal in the same pressure cooker using 2 vessels. (saves time)
  • While mixing rice and sambar. Add sambar little by little.
  • Mix it just before serving. Because it may get tightened and loose its nature. If so add some sambar before serving.
  • While adding Bisi Bela Bath powder sambar will become thicker little bit.
