CHILLI PANEER DRY

Instead of regular paneer recipes today I am posting this Indo Chinese recipe. Chilli paneer is one of the favourite food for many vegetarians. This is delicious and perfect for vegetarian party Starter / Appetizer. It is easy to prepare restaurant style chilli paneer recipe at home.

INGREDIENTS :

For Batter:

  • Paneer – 3/4 cup (cubed)
  • Corn flour – 2 Tbsp
  • All purpose flour –  1 Tsp
  • Salt – to taste
  • Black pepper powder – 1 Tsp
  • Water – as needed
  • Ginger garlic paste – 1 Tsp
  • Oil – for shallow fry

For Chilli Paneer :

  • Oil – 1 Tbsp
  • Garlic – 1 Tbsp (finely chopped)
  • Ginger – 1 Tbsp (finely chopped)
  • Green chilli – 3
  • Kashmiri chilli powder(opt) – 1/2 Tsp
  • Onion –  1/4 cup (cubed)
  • Capsicum/ Bell pepper – 1/2 cup (cubed)
  • Soy Sauce – 2 Tsp
  • Red Chilli Sauce – 1 Tsp
  • Green chilli sauce(opt) – 1/2 Tsp
  • Sugar – 1 Tsp
  • Water – as required
  • Salt – to taste
  • Spring onions – 2 Tbsp (finely chopped)

PREPARATION :

  1. Make paneer into cubes.
  2. Chop onion, capsicum into cubes.
  3. Finely chop spring onion, ginger, garlic.
  4. Slit green chillies.

PROCEDURE :

For Frying Paneer:

  1. In a mixing bowl add corn starch, all purpose flour, pepper powder, ginger garlic paste and salt.
  2. Add little water and prepare batter. Add paneer cubes and coat well.
  3. Add 2 Tbsp oil and slightly fry the paneer until it starts to turn golden brown on all the sides. (You can even deep fry)
  4. Keep the remaining batter aside. We will use it later.

For Chilli Paneer :

  1. Remove paneer and in the same pan with 1 Tbsp oil start gravy preparation.
  2. Add ginger, garlic and green chilli and saute for a min.
  3. Add chilli powder and mix well.
  4. Add onions and capsicum.
  5. Just toss it for a while. Add Soy sauce, green chilli sauce and red chilli sauce.
  6. Mix it. Add salt and sugar. (Remember sauces contain salt in it. So add accordingly)
  7. Add the remaining corn starch batter. Saute well.
  8. It will get thickened. Add fried paneer. Coat well with gravy and saute for 2 min.
  9. Add spring onion(greens) and turn off the heat.
  10. Add freshly crushed pepper on the top.(optional)

TIPS :

  • If you are using spring onion white part, add this with regular onions.
  • Adding kashmiri chilli powder gives good colour. But it is completely optional.
  • You can use tomato ketchup. If so, skip sugar.
  • Don’t let the veges to become soft. For this recipe veges should be crunchy. Cook on medium high or high flame.
  • Make sure you keep all the ingredients measured and ready before you start.
  • If you are cooking this for the first time I suggest you to mix all sauces in small bowl and keep it ready.
