SOYA CHUNKS FRY – Meal Maker Fry
Soya Chunks / Meal maker fry is a dry recipe which is usually served with roti, chapati or even with steamed rice with Sambar, dal or rasam. Usually I prepare soya chunks recipes when literally no veges available in my kitchen. A simple rasam rice or curd rice with this nutritious side dish makes a good lunch. You may also like other vegetable side dish recipes.

INGREDIENTS :
- Soya chunks – 3/4 cup
- Water – as needed
- Salt – as needed
- Oil – 1.5 Tbsp
- Cumin seeds – 1 Tsp
- Onion (finelly chopped) – 1/2 cup
- Curry leaves – 4 or 5
- Ginger garlic paste – 1/2 Tbsp
- Tomato (finely chopped) – 1/2 cup
- Black pepper powder – 1/4 Tsp
For Marination :
- Red chilli powder – 1/2 Tsp
- Cumin powder – 1/2 Tsp
- Amchur (dry mango) Powder – 1/4 Tsp
- Salt – as needed
- Turmeric – small pinch
- Garam masala (opt) – 1/2 Tsp
PREPARATION :
- Boil 2 cups of water over medium heat.
- When it starts boiling add soya chunks. Turn off the heat and cover it with a lid.
- Let it sit for 20 min. After that filter the water.
- Let it cool down a bit. When it is warm squeeze out the excess water.
PROCEDURE :
For Marination :
- Chop the meal maker.(optional)
- Add the spices(red chilli powder, cumin powder, amchur powder, turmeric and garam masala) and salt.
- Combine well and let it sit for about 15-20 min.
For Fry :
- Heat oil in a kadai/pan.
- Add cumin seeds. Saute once and add onions and curry leaves.
- Saute until onion becomes translucent.
- Add ginger garlic paste and cook until there is no raw smell.
- Add tomatoes. Saute until soft.
- Now add the marinated soya chunks. Combine well.
- Add black pepper powder and salt. Remember we have added salt while marinating soya chunks. So add salt only if needed.
- Cover with a lid and cook for 5-7 min.
- Mix often in regular intervals. Do not let it get burnt at the bottom.
- Sprinkle water if needed.
- Turn off the heat and serve it. Garnish with coriander leaves. (optional)
NOTES :
- Small soya chunks suits well for this recipe.
- If you using big ones as I do today, I suggest you to chop it small as needed.
- Remember Soya chunks will increase in size when it is soaked in hot water.
